Outdoors, the decision is more complicated than simply counting flowering weeks. Genetics provide an approximate maturation window, but sunlight, temperature, rainfall, plant health, latitude, and seasonal weather can all shift development. Large outdoor plants may also mature unevenly, with upper flowers receiving stronger sunlight and reaching maturity before shaded flowers deeper inside the canopy.

Scientific research supports the idea that cannabis chemistry changes substantially during late flowering. In a 2025 field study of two cannabinoid-rich hemp cultivars, CBD and THC concentrations increased strongly between early and late flowering but then declined as plants progressed into senescence. A cultivar described as an “early October” finisher may mature differently in coastal California than in a cooler northern climate, and plants grown from seed may vary from one another even when they share the same parents. Photoperiod plants begin flowering in response to seasonal changes in day length, so latitude can substantially alter when flowering begins and how much favorable weather remains before winter.

Genetics also affect the amount of environmental risk a plant can tolerate late in the season. Compact, broad-leaf cannabis often develops dense inflorescences that can retain moisture, while some tropical or narrow-leaf forms produce looser flowers that provide greater air movement. Botanical research comparing cannabis populations notes that dense Central Asian-type inflorescences can be particularly susceptible to Botrytis cinerea, the fungus responsible for gray mold or bud rot. As flowering advances, many darken, curl inward, and become less visually prominent as the bracts surrounding them expand. Mold is not simply cosmetic; some fungal contaminants represent genuine quality and health concerns.

Harvesting Large Outdoor Plants in Stages

Outdoor plants frequently develop large, uneven canopies, and there is no biological requirement to harvest every branch on the same day. Upper and outer flowers exposed to strong sunlight can mature earlier than lower or shaded flowers. Dry trimming leaves more of the plant intact during drying and removes the remaining leaf material later. The additional plant tissue can slow moisture loss, which may be advantageous in dry environments where flowers otherwise dry too rapidly. There is not one method that is superior for every harvest. Moisture remaining deeper inside the flowers redistributes through the material, reducing the difference between the drier exterior and the interior. Post-harvest research continues to investigate exactly how curing changes cannabis chemistry, but it is clear that storage conditions influence cannabinoid stability, moisture, and microbial quality. Recent research on hemp has shown that drying and curing methods can measurably affect cannabinoids and microbial populations.

Field research shows that cannabinoids can peak before the latest possible harvest date, while disease research makes clear that leaving mature flowers outdoors through wet weather can create substantial Botrytis and post-harvest losses.

Good outdoor harvesting is therefore an exercise in observation rather than rigid rules. Begin inspecting plants closely as their expected maturity window approaches, examine several flowers rather than one convenient top, and be willing to harvest different plants—or even different branches—at different times. Once the flowers are cut, treat drying and storage as extensions of growing marijuana rather than cleanup chores. Outdoor cannabis can spend five or six months developing in the sun, yet much of its final quality can still be preserved or lost during the last few days surrounding harvest.
